Vodka Sauce

Ingredients:

  • 1 tablespoon salted butter

  • 1 tablespoon olive oil

  • 1/2 - 1 teaspoon Calabrian chili paste (can substitute red pepper flakes)

  • 1/2 cup finely minced white onion

  • 2 cloves minced garlic

  • 3-4 tablespoons vodka

  • 1/2 cup heavy cream

  • 4.5 oz tomato paste

  • 1 pound pasta

  • Salt & pepper to taste

  • Parmesan cheese

Recipe:

  1. Cook pasta & save starchy pasta water.

  2. Place butter, olive oil & Calabrian chili paste in skillet on medium heat and allow butter to melt.

  3. Add in onions and cook until translucent.

  4. Add in minced garlic + salt and pepper to taste. Allow garlic to cook for about 1 minute.

  5. Add tomato paste to the pan and cook until it turns a bit darker in color.

  6. Pour vodka in to the pan- it should sizzle very loudly. Alcohol should cook off in a few minutes.

  7. Add in heavy cream and mix well.

  8. Place the cooked pasta in the skillet and add starchy pasta water until desired thinness is reached. Top pasta with parmesan.

  9. Plate and enjoy 😊
