Oreo Truffles
Ingredients:
1 14.3 oz package of regular Oreos
1 8oz brick of cream cheese (room temperature)
1 12oz bag of semi sweet chocolate chips (could also use white chocolate, dark, etc.)
3 tablespoons coconut oil (or other neutral oil)
Recipe:
Pulse Oreos in a food processor until the crumbs are very fine.
Mix together room temperature block of cream cheese and Oreo crumbs (either with electric mixer or by hand)
Roll the cream cheese/Oreo mixture into 1 inch truffles
Refrigerate the truffles in the refrigerator for about an hour, until firm enough to work with
Melt chocolate chips (either in the microwave in 30 second bursts or in a double boiler) and coconut oil
Dip and coat the truffles into the melted chocolate mixture; top with sprinkles if desired
Refrigerate overnight
