Shakshuka

Ingredients:

  • 1 tablespoon olive oil

  • 1/4 cup diced red pepper

  • 1/4 cup diced white onion

  • 1.5-2 cups crushed tomatoes (diced tomatoes or tomato sauce work as well!)

  • 3 eggs

  • Salt, pepper & red pepper flakes

  • Optional toppings/sides: feta cheese, avocado, cilantro, bread of choice

Recipe:

  1. Preheat oven to 375ΒΊ.

  2. Heat 1 tablespoon of olive oil in a non stick pan.

  3. Add diced onion and red pepper. Season with salt, pepper & red pepper flakes to taste.

  4. Cook onions and pepper until slightly softened. Add minced garlic cloves.

  5. Once garlic has browned slightly, add in 1.5-2 cups of whatever tomatoes you are using.

  6. Let the tomatoes simmer and thicken up a bit (5-10 minutes). Taste for seasoning before adding eggs. I typically add some dried cilantro & more salt at this point.

  7. Crack eggs into a bowl. Make a well with the back of a spoon where you want each egg to go.

  8. Bake shakshuka in the oven for 5-10 minutes until eggs have reached desired doneness and the shakshuka has set. I, personally, do away with this step and cook the eggs on stovetop with a tightly fitting lid, as I do not mind a runny egg/tomato mixture. Either method is delicious!

  9. Top with desired ingredients.

  10. Plate and enjoy 😊
