Cauliflower Gnocchi with Truffle Cream Sauce

Ingredients:

  • 1 bag of Trader Joe’s Cauliflower Gnocchi

  • 1 tablespoon butter

  • 2 teaspoons truffle oil

  • 1 clove garlic, minced

  • 1/4 cup heavy cream

  • Salt & pepper

  • Optional: grated parmesan & sunny side up egg for topping

Recipe:

  1. Cook gnocchi however you like. I recently tried roasting them in the oven at 400 for about 30 minutes and LOVED it. Pan sauté is another cooking method to get these cooked quickly.

  2. Melt down butter and truffle oil in a pan.

  3. Once butter/oil has melted, add in minced garlic and cook until lightly browned.

  4. Add in heavy cream and let it simmer on low until sauce has thickened. It should coat the back of a spoon.

  5. Season with salt and pepper to taste.

  6. Add cooked gnocchi to the sauce.

  7. OPTIONAL: cook egg in non-stick pan to desired doneness. I made mine sunny side up, as the runny yolk adds so much flavor to this dish.

  8. Top cauliflower gnocchi with more black pepper and truffle oil. Add parmesan cheese and egg if desired.

  9. Plate and enjoy 😊
