Roasted Artichoke
Ingredients:
1 whole artichoke
1 lemon
Bowl of lemon water (big enough to hold the halved artichoke)
3 cloves of garlic, diced
Handful of Italian parsley, diced
Olive oil
Salt & pepper
Optional: Parmesan cheese & dipping sauce
Recipe:
Preheat oven to 375ΒΊ.
Cut off the stem of the artichoke and remove the first row of leaves closest to the stem.
Slice artichoke in half lengthwise and scoop out the hairy choke (I used a grapefruit spoon to do this and it worked well).
Immediately rub lemon all over the artichoke and then place in lemon water to prevent browning.
Combine the diced garlic, parsley, 1 tablespoon of olive oil, and salt/pepper to taste.
Place artichokes on a baking sheet and drizzle with olive oil and season with salt and pepper. Place the garlic mixture in the middle of the artichoke.
Roast until tender (about 30 minutes).
Optional: top with Parmesan cheese or dipping sauce.
