Stuffed Mushrooms

Ingredients:

  • 10 oz container of Baby Bella mushrooms

  • 1/4 white onion, diced

  • Olive oil

  • 1/2 cup ricotta

  • 1/4 tsp Calabrian Chili paste (or red pepper flakes)

  • 1/4 cup shredded mozzarella

  • 2 tablespoons grated parmesan

  • Salt & pepper to taste

Recipe:

  1. Preheat oven to 400º.

  2. Clean mushrooms with a damp paper towel.

  3. Remove the stems from the mushrooms and scoop out the insides creating space for the filling. Chop up the discarded stems/insides.

  4. Heat a pan with olive oil and add diced onions.

  5. Once the onions have softened, add the mushrooms. Season with salt & pepper to taste. Let this cook for about 3-5 minutes and cool.

  6. Combine ricotta, Calabrian Chili paste and cooled onion/mushroom mixture and stuff mushrooms.

  7. Top with shredded mozzarella, parmesan, and a drizzle of olive oil.

  8. Bake for 20 minutes at 400 and broil for the last few minutes until the cheese is crispy.

  9. Plate and enjoy 😊
