Stuffed Mushrooms
Ingredients:
10 oz container of Baby Bella mushrooms
1/4 white onion, diced
Olive oil
1/2 cup ricotta
1/4 tsp Calabrian Chili paste (or red pepper flakes)
1/4 cup shredded mozzarella
2 tablespoons grated parmesan
Salt & pepper to taste
Recipe:
Preheat oven to 400º.
Clean mushrooms with a damp paper towel.
Remove the stems from the mushrooms and scoop out the insides creating space for the filling. Chop up the discarded stems/insides.
Heat a pan with olive oil and add diced onions.
Once the onions have softened, add the mushrooms. Season with salt & pepper to taste. Let this cook for about 3-5 minutes and cool.
Combine ricotta, Calabrian Chili paste and cooled onion/mushroom mixture and stuff mushrooms.
Top with shredded mozzarella, parmesan, and a drizzle of olive oil.
Bake for 20 minutes at 400 and broil for the last few minutes until the cheese is crispy.
